Cherry Clafoutis


1 lb cherries

1 tbsp brandy or sherry

½ cup sugar

½ cup flour

pinch of salt

1 ¼ cup milk

3 eggs

(optional) icing sugar


  1. Pre-heat oven to 425ºF.
  2. Place cherries (remove pits first) in the bottom of a greased deep pie pan or cast iron pan.
  3. Drizzle with brandy or sherry.
  4. Whisk together all other ingredients then pour over cherries.
  5. Place in oven and immediately turn the oven down to 375ºF.
  6. Bake for about 30 minutes, until it has risen and browned lightly.
  7. (optional) Sprinkle with icing sugar before serving.
