Cherry Lemon Cake

Not just a delicious dessert but it’s also great served with coffee or tea!


2 cups frozen cherries (pitted)

4 eggs, separated

1 ¾ cups white sugar

3 tsp vanilla

1 cup vegetable oil

Juice and rind of 2 lemons

2 ½ cups flour

2 tsp baking powder


  1. Cut cherries into quarter and lightly flour
  2. Beat egg whites until frothy
  3. Add egg yolks, oil, lemon juice and rind, and vanilla, then mix
  4. Mix dry ingredients together in a separate bowl
  5. Fold in dry ingredients and floured cherries
  6. Butter and lightly flour a 9×9 square baking dish
  7. Pour in batter and bake at 350°F for about 75 minutes
