Cherry Lemon Cake
Not just a delicious dessert but it’s also great served with coffee or tea!
Ingredients
2 cups frozen cherries (pitted)
4 eggs, separated
1 ¾ cups white sugar
3 tsp vanilla
1 cup vegetable oil
Juice and rind of 2 lemons
2 ½ cups flour
2 tsp baking powder
Instructions
- Cut cherries into quarter and lightly flour
- Beat egg whites until frothy
- Add egg yolks, oil, lemon juice and rind, and vanilla, then mix
- Mix dry ingredients together in a separate bowl
- Fold in dry ingredients and floured cherries
- Butter and lightly flour a 9×9 square baking dish
- Pour in batter and bake at 350°F for about 75 minutes
