Cherry Muffins
Make these cherry muffins for an easy breakfast or snack on the go!
Ingredients
2 cups all-purpose flour
1 Tbsp baking powder
½ tsp salt
(¼ tsp nutmeg)
2 lrg eggs
1 cup milk
½ cups packed light brown sugar
¼ cup butter, melted
1tsp vanilla
1 ½ cups pitted, lightly chopped, cherries
optional: cinnamon brown sugar topping: 2 Tbsp brown sugar mixed with 1 tsp cinnamon
Instructions
1. Preheat oven to 400F
2. Whisk together flour, baking powder, salt and nutmeg
3. In a separate bowl, whisk together eggs, milk, sugar, butter and vanilla
4. Fold dry ingredients into wet, do not overmix
5. Chop your pitted cherries to desired size, fold into batter
6. Place batter into muffin cups, (optional: sprinkle with cinnamon sugar topping)
7. Bake for ~20mins (until inserted toothpick comes out clean), let cool for 2-3 mins
8. Enjoy!
Makes ~12 muffins.
