Cherry Pie Crumb Bars

These are a super easy sweat treat to make for any cherry lover out there!

Ingredients

½ cup butter, melted then cooled to room temperature

½ cup sugar

1½ cup flour

½ tsp baking soda

½ tsp baking powder

¼ tsp salt

2 cups fresh cherries, pitted then cut in half

1 Tbsp cornstarch

1 Tbsp lemon juice

1 tsp sugar

Instructions

  1. Pit and cut cherries in half
  2. Add cornstarch and lemon juice, mix till all cherries are coated, set aside
  3.  Once melted butter is cool, mix in sugar
  4. Add flour, baking soda, baking powder and salt to the butter-sugar mixture, mix together until it resembles crumbs
  5. Line a 9″ baking pan with parchment paper and press ¾ of the crumble into the bottom
  6. Spread the cherry mixture evenly over the ‘crust’
  7. Sprinkle the remaining crumble over the cherry mixture, then sprinkle 1 tsp of sugar on top of that
  8. Bake for about 25-30 minutes at 375F, until golden brown
  9. Let cool completely before cutting into squares
