Coconut Cherry Granola

Granola is super easy to make at home! Eat it on its own, with milk or as a topping on yogurt!

Ingredients

1 ½ cups rolled oats

½ cup shredded coconut

¼ cup maple syrup

¼ cup melted coconut oil

pinch of salt

1 cup dried cherries – roughly chopped

(optional) dash of cinnamon and/or vanilla

Instructions

  1. Set aside the dried cherries.
  2. Mix oats, shredded coconut, maple syrup, coconut oil and salt together in a bowl.
  3. Spread out evenly on a baking sheet lined with parchment paper.
  4. Bake at 325ºF for 25-30 minutes, until lightly browned.
  5. Once cool stir in the dried cherries.

Note: trying adding a handful or two of your favorite nuts and/or seeds before baking to make it more nutritious!
