White Chocolate Coconut Cherry Cookies

Looking for ways to use those dried cherries you made in the summer? Try these white chocolate coconut cherry cookies, they’re perfect for treat in lunches, with morning your coffee or shared with a friend! P.S. you can use store bought dried cherries too!

Ingredients

½ cup butter, room temperture

½ cup packed brown sugar

½ cup white sugar

1 egg

1 teaspoon vanilla extract

1 ½ cups flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup white chocolate chips

½ cup shredded coconut

1 cup dried cherries

Instructions

  1. Preheat oven to 375° F
  2. Mix butter and both sugars together until light and fluffy
  3. Beat in egg and vanilla
  4. Sift together flour, salt and baking soda
  5. Gradually mix in dry ingredients until just combined
  6. Stir in white chocolate chips, coconut and dried cherries until just incorporated
  7. Roll dough into balls, place on cookie sheet
  8. Bake cookies for about 13 mins or until the edges just start to turn golden
  9. Let cool on baking sheet for about 2 mins before transferring to wire rack to fully cool
